Homemade Vegan Irish Cream (Bailey’s)

Homemade Vegan Bailey’s Irish Cream. This is the best and the worst thing I have done all week. Yikes! I used to be such a big Bailey’s fan—in fact, Bailey’s on the rocks was one of my go to drinks. And then I went vegan. And I tried to convince myself that there was some kind of magic that made it dairy free. But that wasn’t true. So it’s been a while since I’ve enjoyed the yummy flavor of Irish cream. I saw a recipe a long time ago, but didn’t get around to making it. So when several recipes popped up again this week for St. Patrick’s Day I knew what I would make for a treat this weekend!

This was super simple to make, and came together in under 10 minutes. Dangerous. And of course I made this at 3:30 in the afternoon. This is one of those times that you wish Vegas rules applied to real life. In Vegas, drinks at 3:30? No problem? Real life, home with your toddler? Sounds good but probably isn’t the best idea. So I’ll save it for a post toddler bedtime treat. I did make sure to sample enough to make sure the “flavors were right though!” David really wanted to sample it too, so I explained to him that this was another “Mommy juice.”  I made him a fresh cup of chocolate milk and he was excited/distracted. A win for all of us!

Pop over to Oh She Glows and try this recipe, so yummy! I only had full fat coconut milk, so I used 1 can of that and 2 c of unsweetened almond milk. I don’t think you can go wrong with this one!
