This festive Spice Cookie Granola is a perfect gift to give at the holidays!
I really love granola. It’s kind of the perfect breakfast for me. Not too light, not too heavy, any flavor you want—the possibilities are endless. I’ve even been known to pop mine in the microwave with some soy milk to make a sort of oatmeal. I love it. Some of my favorites are my Chocolate Crunch Granola and my Salted Caramel Granola. I like them both so much, but it was time for my granola to get dressed up for Christmas.
I worked off of my Salted Caramel Granola recipe, changing out the flavors and using the same flavors I use in my Sugar and Spice Cookies. Oh yes. It’s amazing.
I’m planning on making a big batch of this next week and packaging it up into little bags to gift to all of my neighbors. I’ve been wanting to do this for some time, but life has gotten in the way. Next week David will be home from school so I’ll need some activities to keep us all busy and sane—baking for the neighbors sounds like a perfect way to spend some of our time together!

Spice Cookie Granola
Ingredients
- 1/2 cup maple syrup
- 2 Tablespoons molasses
- 1/2 teaspoon ginger
- 1/2 teaspoon cloves
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 Tablespoon coconut oil optional
- 4 cups rolled oats use gf if necessary
- 1 cup shredded coconut unsweetened
- 1 cup dried cranberries roughly chopped
Instructions
- Preheat your oven to 325°. Line a large jelly roll pan with parchment paper and set aside.
- Mix up the maple syrup, molasses, spices, and optional coconut oil.
- Put oats and coconut in a large mixing bowl.
- Pour the syrup sauce over the oat mixture and stir until coated.
- Spread the oat mixture onto the prepared pan.
- Bake for 30 minutes, stirring every 10 minutes or so, so that the edges don't get too brown.
- Allow to cool. Granola will crisp up as it cools.
- Mix in dried cranberries.
- Serve and enjoy!

I always make food gifts for all my kids’ teachers. There are so many teachers between regular school, Hebrew school, piano lessons and other after-school activities. So I end up having to do an assembly line for the food gifts! I usually do something sweet (like a mini-loaf or granola) and something savory (soup mix in a jar). But this year there are just too many people to give gifts to, so I’m making a bunch of truffles and adding in gift cards.

Yes, some years it feels like there are SO many people to gift to! We make ornaments for all of our relatives and do the same assembly line!!!
